Avocado & Black Bean Tostadas

INGREDIENTS
Avocado Cream:
- 1 ripe avocado
- ¼ cup sour cream
- 2 tablespoons lime juice
- 1 tablespoon cilantro, rough chopped
- salt & pepper to taste
Salsa:
- 1 cup fresh tomato, diced
- ½ cup black beans, rinsed and drained
- ½ cup corn, fresh or roasted
- 2 scallions, thinly sliced
- 1 dash hot sauce
- salt & pepper to taste
DIRECTIONS
To Make the Avocado Cream:
- Mash the avocado in a bowl with a fork.
- Add the sour cream, lime juice, and cilantro.
- Stir well and mix to form a cream.
- Season with salt and pepper. Set aside.
To Make the Salsa:
- In another bowl, combine the tomato, black beans, corn, scallions, and hot sauce.
- Mix well and season with salt and pepper.
To Assemble the Tostadas:
- Put a small dollop of the avocado cream on each tostada, then top with the salsa. Enjoy!
